Une étoile peu convaincante. C’est vraiment dommage car le lieu est très beau et le personnel très sympathique !
Une note (addition) bien trop élevée pour une cuisine manquant de saveur…

We first found Hotel Signum 24 years ago and had such a memorable stay that we came back for our 25th anniversary. This family run hotel has only gotten better, providing a warm and charming atmosphere in an unforgettable location, with stunning views, gourmet food, pool, spa, and comfortable rooms. We love that it is not stuffy or pretentious, and the adult children of Clara and Michele have continued the tradition providing the best of Aeolian hospitality. Salina is spectacular as well! Worth the trip!!

Only visited the restaurant by Martina Caruso which IMHO deserves a separate Google listing - won‘t be able to rate the hotel…
Stunning island kitchen with local ressources. It all comes at a price tag that even for one Michelin star I would call exclusive. So this is certainly not a bargain or „good value for money“… but you fully get what you ask for. Every course is spectacularly simple and complex at once. The taste of the Aeolian island is written all over what they serve and they do it wonderfully. The service is outstandingly kind and their smile when presenting dishes insinuates… how do I put this… some well deserved pride. You will like it. I did. It‘s one of those experiences that resonates for some time.

Ristorante top nell’ isola che non c’è!
Esperienza mondiale da non perdere.

La cena ha tradito ogni aspettativa, instillando in tutti i commensali la convinzione che questo ristorante non possa definirsi stellato.
Quantomeno perché nè il cibo nè il servizio possono ritenersi tali.
Una prima grave pecca, a mio parere, si è verificata già in sede di prenotazione: un cliente non abituale non può sapere (e non viene spiegato in prenotazione) che alla diversificazione dei menu gourmet e bistrot corrisponde una diversa ubicazione del tavolo. E purtroppo la bella terrazza ove avremmo voluto cenare andava di pari passo con il menù Bistrot (peraltro più economico ma più allettante onestamente, vista la carta poi propostaci quella sera).
Anyway, gli appetizers offerti dalla chef preferisco non commentarli: la rondella di pomodoro e cetriolo privo di ogni eventuale salsa o “concetto” di piatto, ha suscitato un sorriso. Il gambero con limone salato e bloody mary era buono ma il successivo brodo di pesce ha deluso nuovamente, prima per l’impiattamento e poi per il gusto.
Dolcetti misti invece buoni e gustosi.
Nota dolente il servizio: salvo un cameriere, che se non vado errata è colui che si occupa dei vini (molto buono il secondo calice di champagne che ci ha consigliato), gli altri non sono stati assolutamente all’altezza di uno stellato (piccolo esempio, aver svuotato la bottiglia di acqua gas nel bicchiere di chi lo aveva pieno di naturale, senza neppure accertarsene, o attendere di portarci la seconda metà del calice vino quando ormai la cena era terminata, nonostante lo avessimo segnalato alla signora di sala).
Chiudo con il conto: i prezzi erano ben noti prima di accomodarci quindi, nulla questio, ma se il conto è 192 euro, lo scontrino fiscale deve essere erogato (soprattutto se la cifra pagata è pari a quella richiesta) e non deve essere fornita una copia in “preconto” nella speranza che il cliente non richieda successivamente la ricevuta.
Abbiamo dovuto attendere più di cinque minuti in piedi nel mezzo della sala per ricevere lo scontrino fiscale che, evidentemente, i membri del personale non hanno contezza di dove venga erogato.
Peccato, perché la location è veramente bellissima e merita 5 stelle.

Ottimo ristorante!

Ho provato il ristorante stellato. Menù degustazione 9 portate. Tutto buono ma mancava quel tocco di magia che generalmente i piatti dovrebbero trasmettere. Servizio un pò frenetico con atteggiamenti un pò macchinosi.

What a pity really.

I stayed at this hotel 5years ago and had a wonderful memory of the place, which still looks magnificent don’t get me wrong.
But the vibe is really not the same as it used to be. I don’t know if they changed owners or anything but it feels like it wants to be super luxury without actually feeling like it.

The one major massive flaw that pushes me to write this comment is the breakfast. Which is - and I see other comments here going my way - one of the most important and enjoyable moment when staying in a hotel.

And they ruined it.

We payed 35euros for a bottle of sparkling water, a coffee, a tiny glass of industrial yogurt and a dry toast with basic scramble eggs. What an awful way to start the day.

Not only do they cut the breakfast from the overall staying package but they also don’t even manage to make it great for the price you accept to pay.

And this does not work.
The pool is great, the view is very charming yes, rooms are cozy but pleaaaase.
Play all the way or don’t play at all.

This is not even about the money, it’s a matter of principal.

You get it, I’m frustrated.

This review is for the tasting menu restaurant, which I am sad to say is one of the most expensive meals we had on the Aeolian Islands and was also the absolute worst. The food was inedible. I don’t need to go into more detail but I cannot recommend anyone eat here.
